Thai Lettuce Wraps Posted on February 5, 2024 I absolutely love thai lettuce wrap. In probably an unhealthy way as I devour them when we are out for dinner. Good thing my boyfriend doesn’t care for the asian flavors; more for me! I often make these when friends come over as well and since they take a bit of time, it’s nice to delegate chopping tasks to said friends. I make my friends work when they come over. Then we eat and play board games #MassiveNerd #DontJudgeMe *Heads up* Give yourself some time for this recipe as the chicken is most tender and juicy after it has marinated for a couple of hours in the fridge. So just plan accordingly as this dinner cannot be thrown together willy nilly! Ingredients: 2 boneless skinless chicken breasts (Cut into strips) 1/3 cup hoisin sauce 1/3 cup soy sauce (Or you can substitute for Liquid Aminos if you’d prefer) 1 tablespoon of grated ginger I sometimes cheat and buy the frozen ginger packs and thaw them as raw ginger often goes bad at my house since I don’t use the whole ginger root as much as I should 1 tablespoon sriracha 1 tablespoon rice wine vinegar 2-3 cloves of garlic (Grated) Can substitute for garlic in a jar if you prefer that 2 tablespoons of chopped peanuts (I stick mine in the ninja chopper and go to town as I like them super thin) 2 tablespoons of chopped cilantro (Or can use prechopped ones from the fridge section in the little clickable bowls) Lettuce and Filling Ingredients: 8 butter lettuce leaves (I like the hydroponic ones sold in a clear plastic box) 1 cup thinly sliced red cabbage 1 cup julienned carrots 1 cup sliced cucumbers 1 cup bean sprouts 1 cup of cooked rice noodles 1/3 cup sweet chili sauce 1/3 cup hoisin sauce Instructions: Mix the hoisin sauce, soy sauce, ginger, sriracha, garlic and rice wine vinegar in a large container/bowl/ziploc bag. Add your chicken strips and let it marinate for 2 hours min in the fridge Heat your pan after chicken is completely marinated to medium high and cook until done (About 2-3min on each side, depending how wide the strips are). Sprinkle peanuts and cilantro on chicken while hot and set aside Set out all the other sides on a platter and assemble to your liking. You can add some hoisin and chili sauce, roll them up and enjoy.
