Pico de Gallo Posted on February 2, 2024February 3, 2024 Taco Tuesday often happens at our house, but never on a Tuesday somehow… Regardless, I love making home made sides with items from my garden and pantry vs buying the prepackaged items at the store. They are great if you are tight on time, but if you have 30 extra minutes to spare, check out the recipe below and let me know what you think. I made this recipe just for the three of us one night, so feel free to double the recipe if you have more folks in your household. Ingredients: 8-10 little tomatoes (I harvested mine from my garden but 3-4 regular tomatoes would work too) 1 tablespoon of cilantro 1 squirt of lime Heavy pinch of salt 2 tablespoons of chopped white onion (Again, add more if you are doing more tomatoes) Instructions: Chop tomatoes and add the rest of the ingredients Stir well and let it marinate for at least 10 minutes to let the flavors come out If you make a big batch, this will also stay well for a day or two. I mixed mine with some avocado and ate it for breakfast the next morning. The juice from the lime keeps it from turning brown if you mix it with some avocado! Let me know what you think and enjoy!
