Holy Guacamole! Posted on February 5, 2024 My love for guacamole was established in 2017 during a bachelorette party to Mexico. I won’t go into details of the bachelorette party but what I can go into details of is the absolutely amazing guacamole those folks made at our resort!!! I am 100% confident that is the reason I came back 3lbs heavier, but it was so worth it. The key to amazing guac? Marinate your red onion in lime. Never tried it before? Just trust me… check out the recipe below and try it and comment after! I want to know if you leveled up your guac game after trying this one! Note: You may not be aware, but there are so many different olive oils out there. If you can, try to buy from olive oil that is sourced from a single origin. There are so many olive oils that are sourced from multiple different countries and the flavor lacks a bit and every country has different regulations etc. I won’t go too far into the weeds on this one, but if you can find single sourced EVOO such as from Italy or Greece, get that one! You’ll notice the difference in flavor immediately. Also, pro tip – store your olive oil in a dark glass container vs on the counter in a see through glass container. UV rays degrade it so that is why olive oil is often sold in a dark green glass – the color helps filter out damaging UV rays 🙂 Ingredients: 2 ripe avocados Juice from 2 limes Coarse salt 1/4 cup finely diced red onion 4-6 grape tomatoes 1-2 teaspoons of cilantro 1 teaspoon of good EVOO (Extra virgin olive oil) Instructions: Chop your red onion finely and add it to a bowl. Squeeze 2 limes and fully submerge the onions Let the marinate for 15-30 minutes. This helps take away the raw, strong red onion flavor Smash your avocado and add the EVOO and a pinch of salt. Mix well Some people prefer it chunky, others smooth – I am a chunky kinda avocado girl but you do you boo Chop your tomatoes and add them with the cilantro plus however much red onion you’d like. Stir everything together and taste – you may need to add more salt or some more reserved lime juice. You can store this in the fridge by pressing a cling wrap close to the guacamole mix (Have it touching) or enjoy it out on the counter (Probably good for an hour or 2) I love making this for parties but do not make it ahead of time. I do chop the onion and marinate it in the lime and chop the tomatoes – but I actually construct it wherever I go. Makes it more fresh and pretty easy to whip together. Let me know what you think!
