Breakfast Egg Bake Posted on February 5, 2024 This is the perfect recipe to make for a Sunday morning and save the rest for quick and easy breakfast options throughout the busy work week. Fun Fact: I don’t eat eggs… BUT… everyone who I make this for tells me it’s delicious – so here we go! I love the versatility of this recipe since you can empty out your fridge and chose whatever vegetables, meats or cheeses you want to add. The base is the same – Eggs, cheese, meat and veggies smashed together and cooked in perfect harmony. I love doing this recipe in my cast iron, because it only takes one pan to throw it all together for the most part! Ingredients: 12 eggs 1 white or yellow onion 1 pack of chicken sausage (Quantity 5 total) (Can substitute for 1/2lb of ground meat here or pork sausage.) 1/2 tablespoon of garlic 1 cup of broccoli florets, diced 1 cup of zucchini or yellow squash, diced (Can substitute for many other veggies here!) 1 bell pepper, diced (Pick whatever color you prefer. Red and orange are so yum!) EVOO salt and pepper 3 tablespoons of italian seasoning 1/4 cup of cottage cheese (Optional but brings in extra protein and you can’t taste it!) Some milk 2 cups of shredded cheddar cheese 1/3 cup panko bread crumbs or equivalent Instructions: Preheat your oven to 350F and grease a 9×13 baking casserole sheet. Disregard this step if you are cooking in a pan that is oven safe – then you can spare on dishes and simply transfer from stove top to oven. Combine eggs with cottage cheese and add a splash of milk. Add Italian seasoning and mix well. (You can do this by hand or use an electric mixer) Heat up your sausages or meat – depending on what you are using. If you are using sausages, make sure they are diced small and brown easily. 2-3min for sausage. 6-8 for the ground meat. Add your onions and garlic and cook on medium until onions are translucent, stirring often so garlic doesn’t burn. Add your vegetables and cover your pot on medium to let them simmer. Turn occasionally. Once meat and vegetables are cooked, add your egg mixture to the pan and remove the lid Add 1 cup of cheese into the mixture and stir everything until it is well combined Take the other cup of cheese and mix it with 1/3 cup of bread crumbs and then sprinkle on top and put in the oven. Bake for 35-45min and check it to see if the edges are set and you can pull a toothpick out of the center without egg stuck on it. Leftovers can be stored in the fridge for 3-4 days and you can reheat them in the air fryer oven feature or microwave! Please note: There are so many varieties that you can do with this recipe. Here are some vegetable options: Broccoli, squash, zucchini, spinach, peppers, mushrooms, potatoes, tomatoes etc. Here are some meat options: Ground chicken, ground turkey, ground beef, ground pork, chicken breast cubed, chicken/pork sausage, bacon etc! Some folks even add some cubed stale bread in it (1-2 slices) just to kick it up a notch. Totally up to you! Let me know what variety you try and enjoy!
