Fluffy German Waffles Posted on January 13, 2024January 31, 2024 This is my grandmothers recipe and it is always a hit with everyone. Oma knew how to make these so please enjoy the recipe below! A couple things to note, please use full fat sour cream, regular white sugar and regular flour. This is one of those meals that substituting items just doesn’t come out right. It is definitely a cheat meal and may increase your insulin levels after reading the sugar amount.. but you only live once, go and eat those German waffles. (I promise 90% of my other recipes will be more health conscious, but you can’t mess with Oma’s recipe or she’d probably beat you with a rolling pin!) PS: Find yourself a kitchen scale because these are measured out in metric units. And I do not have the macros for these. Ingredients for about 6-8 waffles (Depending on the size of your waffle iron): 5 eggs 225g Sour Cream 125g Flour 125g Sugar Instructions: Separate the eggs and put egg whites aside for now Combine the 5 yolks and sugar in a mixer and mix until nicely blended Add your sour cream and continue mixing Slowly add the flour while mixing Once fully combined, set aside and whip the egg whites until stiff Then fold the egg whites under the mixture. (Do not mix or they wont come out fluffy! Only fold under gently until fully combined) Once fully combined and folded under, you are ready to heat up your waffle iron. I like to spray it with some olive oil or avocado oil and let it get warm. I always place a paper towel underneath the waffle iron because lo and behold, I will over pour the batter and it will come out on the sides… You’d think I’d have it down by now. Once waffles turn slightly brown, I take them off and put them on a cooling rack. You can enjoy these with whip cream, berries, Nutella, butter or maple syrup! We don’t judge! Enjoy!
