Instant Pot Chicken Breast Posted on February 18, 2024 You know when your grocery store has bogo chicken breast and you think you won the jackpot and get way too excited? Well that’s what happened to me 2 weeks ago. Of course, life was busy and I threw all 6 chicken breasts into the freezer because I had no time to prepare them. Fast forward 10 days and I thawed them for some meals I was going to prepare. Life happened again and I was stuck with 6 breasts last night that had to either be cooked, or would be past their best use date come Sunday. What do you do with a ton of chicken breast? Especially when your significant other isn’t a chicken fan? You cook it plain and hide it in stuff! Below is the quickest way to take advantage of almost expired chicken and use it later in the week. Ingredients: 3 lbs of chicken breasts 1 cup of chicken broth pressure cooker Trivet salt and pepper Instructions: Pour 1 cup of chicken broth into the pot of the pressure cooker/instant pot Add trivet Add 3 lbs of chicken breasts (Was about 3 breasts for me and season with salt and pepper) Cook on pressure cooker, high, 10 minutes with a 5min natural relief Then open the seal carefully and open once pressure is gone Check internal temp to make sure chicken is 165*F Now you have 3 plain cooked chicken breasts that are easy to add in multiple meals. I prefer to shred mine (Using my ninja blender) or you can shred it simply with 2 forks. I like to add the chicken into chili, salads, quesadillas, burritos and much more. It may seem a little dry by itself but adding some sauce to your meal or mixing it into quinoa bowls makes all the difference. Also great in lasagna or baked casseroles.
